In Jessica Shelly's short time as Food Service Director for the Cincinnati Public Schools, she has made a dramatic impact on the program and the health of its 33,500 students. In her first 18 months, she transformed a budget deficit into a $4.5 million surplus by increasing participation and restructuring the organization. She has saved $5,000 a month with lunchroom recycling, $125,000 a year in labor costs and $150,000 by rebidding contracts. She has increased high school lunch participation by 63% and breakfast by 13%, as well as taking elementary participation to all-time highs. One of Jessica's most lauded achievements is placing a salad bar in every school at no cost to the district or her department. After only 15 months, she placed salad bars in 53 schools, saving over $145,000 in start-up costs. Her achievement was featured on the White House website and now she serves as a guide for other food service directors.
